The Art of Reheating Our Holiday Menus 2025-2026

Find all our instructions to perfectly reheat your Fonteyne holiday dishes.

General Tips

  • !Remember to preheat your oven for 15 minutes at 220° before reheating your dishes.
  • !Our plastic containers must never be used in a traditional oven.
  • !All our sauces can be easily reheated in a pan for 3 minutes or in the microwave for 4 min at 700W.

Appetizers

Box of zakouskis

Reheat your zakouskis for 9 min at 180° in a preheated oven.

Salmon blinis

Reheat the blinis for 5 minutes at 180° in a preheated oven.

Fine tartlet

Reheat the tartlets for 5 minutes at 180° in a preheated oven.

Starters

Our soups

Reheat in a pan or microwave for 5 min (700W). Pour the soup into a deep plate or bowl. Finish with croutons and thick herb cream.

Scallops

For the oven: 12 min. at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 2 min 30 at 700W.

Half lobster in broth

Place the lobster and its broth in an oven dish covered with aluminum foil or a lid, heat for 12 min at 180° in a preheated oven. Heat the creamy sauce and vegetables separately, then mix with the cooking juice.

Grilled prawns

Place the prawns (buttered: optional and delicious) in an oven dish, covered with aluminum foil, heat for 5 min at 180° in a preheated oven.

Open prawn ravioli

For microwave: make holes in the lid and reheat for 4 min at 700W. For the oven: place the ravioli in an oven dish, cover with aluminum foil and reheat for 15 min at 180° in a preheated oven.

Celeriac puree / Wild mushrooms in glass

For microwave: cover with perforated cling film and reheat for 2 min at 700W. For the oven: cover the glass with aluminum foil and reheat for 20 min at 120° in a preheated oven.

Pasta dishes

For microwave: make holes in the lid and reheat for 5 min at 700W. For the oven: place the pasta in an oven-safe dish, cover with aluminum foil and reheat for 15 min at 180° in a preheated oven.

Duo of open prawn ravioli

For microwave: make holes in the lid and reheat for 4 min at 700W. For the oven: place the ravioli in an oven dish covered with aluminum foil and reheat for 15 minutes at 180° in a preheated oven.

Cooked Stuffed Poultry

Duck / Young turkey / Stuffed capon

Place the poultry covered with aluminum foil or a lid for 50 minutes at 180° in a preheated oven. To prevent the poultry from drying out, place a bowl filled with water in the oven during reheating.

Main Courses

Guinea fowl fillet

For the oven: place the guinea fowl in an oven dish and reheat for 20 minutes at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 5 min at 700W.

Farm poularde fillet

For the oven: in an oven dish, reheat for 20 minutes at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 5 min at 700W. Plating/presentation: cut the fillet diagonally in 2.

Stuffed quails

For the oven: place the quails covered with aluminum foil or a lid for 30 minutes at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 5 min at 700W.

Stuffed turkey fillet

For the oven: place the turkey fillets covered with aluminum foil or a lid for 20 minutes at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 5 min at 700W.

Turducken slice

For the oven: place the turducken slices in an oven dish covered with aluminum foil and reheat for 20 minutes at 180° in a preheated oven. For microwave: make holes in the lid and reheat for 5 min at 700W.

Venison fillet, wild boar fillet

Place the fillets covered with aluminum foil in an oven dish for 15 minutes at 180° in a preheated oven.

Cod fillet / Monkfish fillet

Preferably in a traditional oven, otherwise for microwave: make holes in the lid and reheat for 4 min at 700W. For the oven: place the fish in an oven dish covered with aluminum foil and reheat for 15 minutes at 180° in a preheated oven.

Stewed Dishes

Venison and wild boar stew

Place the stew covered with aluminum foil for 30 minutes at 180° in a preheated oven. For quantities greater than 1 kg, allow an additional 10 minutes.

Side Dishes

Potato gratin

Place in the oven for 30 minutes at 180° in a preheated oven. Do not cover.

Braised endive

For optimal cooking, sauté the endives in a pan with butter for 3 minutes, season with salt and pepper. You can also reheat the endives in the microwave for 3 minutes at 700W or in a preheated oven for 20 minutes at 180°.

Apples with lingonberries

Reheat in a preheated oven in a suitable dish covered with aluminum foil for 20 minutes at 180° or in the microwave for 3 min at 700W.

Celeriac (pumpkin) with onion / Young carrots and parsnips

Reheat in a preheated oven in a suitable dish covered with aluminum foil for 20 min at 180° or in the microwave for 4 min at 700W or in a pan for 10 minutes on low heat.

Mashed potatoes

Reheat in a preheated oven in a suitable dish covered with aluminum foil for 30 min at 180° or in the microwave in a suitable dish for 2 min at 700W, stir the mash and again for 2 min at 700W.

Wild mushrooms

Cook the mushrooms in a pan for 3 minutes in a little olive oil or in a preheated oven for 15 min at 180° in a suitable dish.

Raw Poultry

For cooking turkeys, capons and turducken, please refer to the cooking card provided with your order. In addition to the cooking instructions, a pop-up thermometer is placed in each poultry. You don't need to worry about the cooking of your poultry as long as the red pop-up stem hasn't risen 2 cm. It's important to follow the cooking advice on the cooking card carefully. Warning: when the red pop-up stem has risen, you should always check the cooking by inserting a long needle or knife tip into the heart of the poultry and checking that it's hot. If you have a probe, you can also insert it into the poultry and check that the core temperature is at least 90°.

Raw Game

Venison fillet or wild boar fillet

Sear for 2 minutes in a pan over high heat with a little olive oil, season with salt and pepper, remove the barding and sear again, then finish cooking for 10 min (rare) or 15 min (medium-rare) at 180° in a preheated oven.

Venison or wild boar medallions

Sear the medallions for 1 min on each side in a pan over high heat with a little olive oil, season with salt and pepper, remove the barding and finish cooking over medium heat for 2 minutes.

Bread

Bread

8 minutes in a preheated oven at 180°.

Desserts

Pavlova

Distribute the cream and fruit in deep plates, bowls or glasses, drizzle with red fruit coulis and add the meringue on top of the cream.

Mon cherry / Citrus

Distribute the cream / fruit in deep plates, bowls or glasses and add the meringue on top.
