A classic lobster bisque, blended until silky and finished for clean, ocean-sweet depth. The colour tells you it is properly built: a roasted shell stock, then strained and emulsified for a smooth, spoon-coating texture. Served warm, it makes an elegant first course or a light supper. The great French bisques were born in coastal kitchens, where shells were never wasted and flavour was extracted with patience. What you get : - Lobster bisque (500ml) - Accompaniments: croutons, rouille-style mayonnaise Portions : - 2 as a starter - 1 as a light main course Serve it best : - Warm gently in a saucepan over low heat for 6–8 minutes; do not boil. - Stir regularly to keep the texture glossy and even. - Warm bowls with hot water, then ladle in the bisque. - Finish with a small spoon of rouille-style mayonnaise and a few croutons on top. Pairings : - Champagne Brut: the acidity and bubbles cut the bisque’s richness. - White Burgundy (Chardonnay): mirrors the bisque’s roundness without masking lobster. - Dry Loire Chenin Blanc: bright, saline lift. - Alcohol-free: sparkling water with lemon.
