FINE TARTLET / ZUCCHINI / ONIONS / PARMESAN
A fine, square tartelette on flaky puff pastry, topped with ribbons of courgette, slow-cooked onions, and a focused hit of Parmesan. The vegetables are cooked enough to sweeten, not so much that they lose their shape. Vegetable tarts like this are a brasserie staple across France, designed to be just as good warm as at room temperature. Portions - 1 as apéritif for 2–4 - 1 as a starter for 2, or a light meal for 1 Serve it best - Warm in a 180°C oven for 5 minutes to re-crisp the pastry. - Rest 2 minutes, then cut with a serrated knife to keep the layers clean. - Serve with a simple green salad and sharp vinaigrette (optional). - Excellent at room temperature after 20 minutes.
